Pumpkin Spice Muffins Recipe
Last weekend, I whipped up a batch of pumpkin spice muffins that turned out perfectly. They were moist, just sweet enough, and super easy to make. The recipe is inspired by one I found on the Novice Chef blog, but of course, I had to put my own twist on it. Now, it’s your turn to give them a try!
The Perfect Pumpkin Spice Muffins
These muffins bring that cozy, autumnal warmth we all crave. They’re spiced with cinnamon, nutmeg, and cloves—the holy trinity of fall flavors. Plus, they’re sweetened with brown sugar and a touch of maple syrup. Trust me, they’re worth every bite!
Ingredients:
• 2 ¼ cups flour
• 2 ½ teaspoons ground cinnamon
• 1 ½ teaspoons baking powder
• ¾ teaspoon baking soda
• ¾ teaspoon salt
• ½ teaspoon nutmeg
• ¼ teaspoon cloves
• 1 cup packed brown sugar
• ½ cup melted coconut oil
• ⅓ cup maple syrup
• 2 large eggs + 1 yolk
• 3 tablespoons plain yogurt (I used coconut yogurt for a dairy-free option)
• 1 (15 oz) can pumpkin puree (or fresh if you just carved one !)
Instructions:
1. Preheat your oven to 350°F and line a muffin tin with liners (I recommend silicone for easy removal).
2. In a medium bowl, whisk together your dry ingredients—flour, cinnamon, baking powder, baking soda, salt, nutmeg, and cloves. Set aside.
3. In a larger bowl, mix together the brown sugar, melted coconut oil, and maple syrup until smooth.
4. Add the eggs and yolk, and mix until just combined. Stir in the yogurt, followed by the pumpkin puree. Mix until everything’s well incorporated.
5. Slowly add the dry ingredients to the wet ingredients and stir until just combined—don’t overmix!
6. Fill the muffin liners about ¾ full and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Let them cool for 10 minutes in the tin before transferring them to cool completely.
